Is it possible to categorise messages in the Outlook 2003 sent folder
according to recipient's name/address? I have actually selected "Arrange by:
To" but it still displays the sender ( which is our) email addressses.

So the To field is showing the sender's name/address, not the recipients?

Arrange By-> To will group the emails by the "To" field. This doesn't affect
which columns are visible within that view.
To view the To column, set your view to Sent To.
View-> Arrange By-> Current View-> Sent To

If that still doesn't show the To column, then reset the view via;
View-> Arrange By-> Custom-> Reset Current View
