Can't print in black and white, default is color?

I have a 1110 series hp printer would like to set default to black and white. Or at least be able to swithch to b/w printing if thats possible . Please help?

Look in the manual for how to print in GRAYSCALE.

(Hint, a printer has absolutely no white ink!)
