Can't get Display Names to work

I'm confused about how display names work.

I'm using Outlook 2003 to send from my Gmail account (via IMAP). In Outlook
contacts, I have created a display name of the form "Rich Johnson
[(E-Mail Removed)]"

When I create an email and pick the name from my Outlook Contacts list, it
appears fine, as "Rich Johnson [(E-Mail Removed)]". However, when I
later look in my Sent folder in Outlook or Gmail, all I see in the TO: line
is the email address. The display name is gone.

Is there a way to retain the display name on the emails in the Sent folder?
