I sent in email in outlook. I saw it leave my outbox, but when I click on my
sent emails, the file is empty. None of my emails are in there anymore. The
error I'm receiving is "The messaging interface has returned an unknown
error. If the problem persists, restart outlook." I've tried that, it's
still not there.

Any ideas?

Run Outlook Detect/Repair, or Diagnostics, depending on OL version.
With outlook closed run scanpst.exe on your data file
