I've looked through the symbols in Word and can't find the "in care of"
symbol. I was looking for the "c" at the top then a "slash" and then an "o"
at the bottom.

It's Unicode character 2105; a given font may not contain it, but the core
fonts that ship with Word should. In the Insert | Symbol dialog, look for it
in the Letterlike Symbols character subset. Or type 2105 in your document,
select it, and press Alt+X.

You don't need to select the code -- just type the 4-digit (or 5-
digit!) Unicode code and press Alt-X.
