I have windows mail and when I want to forward an email and there are lots of
names of others that have forward it...I can't delete that info. when I
highlight them to delete it highlights the whole email. What do I need to do

Where exactly are you seeing "lots of names", in the quoted part of the
body of the email, or in the To or Cc line?
Try this: with the message open in the compose window, click Format,
Plain Text. That should enable editing in the body of the email.

Same way as you erase or make changes when you are composing an e-mail
........ Backspace.
