Found it! The 'Set as default' option is on a completely different tab!
So if anybody is interested, the steps to set a different default Word theme
in Outlook 2007 theme are:
1) start a new message and then click in the message body
2) go to the 'options' tab
3) press the 'Themes' button and choose the theme you want as your default
4) go to the 'Format text' tab
5) press the 'Change Styles' button and select 'Set as default'.
Note that 'set as default' is greyed out unless you have clicked in the
message body.
Hardly intuitive, but at least there is a way to do it. It looks like the
same goes for Word (setting the default in one application does not affect
the other).
