I just set up Outlook 2007 to work with my Gmail account. When I delete an
email message from the inbox, it draws a line through the title, but does not
delete the message. If I sign out and sign back in, the message is there,
without any indication of the deletion attempt.

Sounds like you're using IMAP to access your GMail account. You need to
purge the marked items (go to the Edit menu and choose one of the Purge
items)
