I am using Outlook 2007 to connect to a SharePoint Document libary. I can
edit documents via Outlook but I cannot add or delete documents via Outlook.
I have full control of the SharePoint document libary. If I try to delete a
document via Outlook I get the message: "This SharePoint list is read-only in
Outlook". Should I be able to add/delete documents via Outlook?

That's a current limitation. You only can modify items and re-post them using
for example Word. If you want to add new items to a document library, you
need to add it using Explorer or IE.

Best,
