Can you undo archiving and also put everything back in it's original folders?

You can import everything back into the mailbox by using File > Import/
Export > from .PST > point to archive.pst and let the magic happen.

The "magic" that will happen is that several attributes will be lost in
the process. Also, items will not be automatically restored to the
original folders, as the OP requests.

If you archived from another .PST file it would be better to open the
Archive.pst file in Outlook (File | Open | Outlook Data File) and then just
drag and drop your items from the Archive file to your main file. Importing
and exporting can mean losing information. If you archived from an Exchange
mailbox you can either use the above method or you can import from the
archive file...it shouldn't matter as much in that case. I'd probably just
drag and drop either way, though.

Sure. Just open your archive PST (FIle>Open>Outlook Data File) and drag the
contents of the folders back where they belong. Ignore anyone who tells you
to use import.
