Is it possible to set up a rule that would filter any e-mail from a source
external to my organisation to a separate in box folder whilst leaving the
e-mails from internal users in the main inbox?

Sure... if from @ ... move to. Internal exchange addresses don't have @ in
them so all mail from outside will be moved.

if you aren't using exchange, move all mail... except those from
@your_domain.com
