all or nothing
but you can set up another folder and make a rule to save sent messages to
it based on certain criteria

Yes, you can control it per message - its on the options ribbon in 2007 or
on the options button/dialog in older versions.

You can send individual messages to the Sent Items folder. In the compose
window, click View>Options and enable the saving there.
