You are on the right track. Once you have the field chooser on screen, drag
the To field off the Field chooser window and drop it beside the existing
Fields (eg Subject). You can also take From away and put it back on the
Field Chooser.
That function works in all table style views in Outlook. Turn on the
Advanced Toolbar and you'll be able to get to the Field Chooser easilly.
