How can you send a meeting request to a lot of people without showing the
recipients the entire list of people invited?

Can't as a Meeting Request as the logic is that if they agree to attend they
would know who's there anyway.

The only reason I can think of for wanting to do that is if you want to
spring a nasty surprise on someone or some people....

You need to use the Resource field for their addresses.
