I have emails that come in and it would make my life easier if I could add a
note or comment that I could refer back to. Is that possible?

you can flag them and change the flag to text to whatever you want.

Open the message, click Edit>Edit Message, add what you want, then close the
message, clicking Yes when asked if you want to save the changes.
