Basically, I need to do spell checking for British spelling. Do I need some
kind of Microsoft Multilingual software installed to do it? I was confused by
the Help function, which said I could change the default language by going
into All Programs/Microsoft Office/Tools/Language. I followed the
instructions, but all it did was change anything I wrote in British English
automatically to US English.

Please advise.

All the functions you require for UK English are included. You need to have
the Windows regional settings (control panel) configured to UK English (you
can remove American English from there also). Then the language of the
document should be set to UK English e.g. Tools > Language > set language.
Uncheck automatically detect language.
