opening a document with the 'File' - 'New' command.

Open the template and in the Properties dialog, check the 'Save Preview
Picture' check box.

Word up to 2003 - File > Properties
Word 2007 > Office Button > Prepare > Properties > Advanced Properties

Add a character to the text space. Delete it then save the template.

Note, however, that every document based on the template will have a preview
by default, and this adds greatly to the file size.
