Can I use wildcards if I setup a rule for text in the subject?

I get many automatic emails with the same subject, apart from some words.

I want to setup a rule to place these mails in folders. Could I use a
wildcard like:
FIXED TEXT ?? FIXED TEXT, where only the ?? is variable?

Nope, but what you can do is this:
Create a rule that looks for the first bit of text and, on finding it, applies
a category to the message.
Second up a second rule *below* the first in the rules list and have it look
for the category AND the second bit of fixed text and have it place the mail
wherever you want.

If you use categories a lot, you can also have that second rule remove the
category, stop processing more rules and create a third rule after the second
that removes whatever category you set to messages with that first bit of
text in it.
