I'm an experience Word user and after months of trying, I hate the Word 2007
menu structure. Is there a way to to turn off the Word 2007 menu and get a
"classic" menu like the Word 2003 menu?

Try the following free add-in, which adds the classic menus and toolbars as a
Classic UI tab (you can do far more customizations including hiding tabs if
you buy it):

No! You could investigate the free version of http://ribboncustomizer.com/
but it will not change the essential character of 2007. If you want 2003
structure you will have to reinstall 2003.
