Is there any way I can tell when a meeting was booked into the Outlook
calendar. Often not sure if they are booked a week or day in advance and
need to know.

Examine the creation date of the item. You'll need to switch to a table
view and use Field Chooser to add it to the header bar.

In the View menu, naturally, or by using the View drop-down on the Advanced
toolbar.
