How can I set up an icon to view the page at more than 100%?

In viewing e-mails, I would like to see them at a minimum of 100% and be able
to make them larger if necessary.

In a word "Zoom". Press CTRL key and roll mouse wheel. (Or select Zoom
from the menu and pick)
