How can I set Office to reject (entirely) email from a sender?

I would like email sent to me by someone I don't want to receive email from
.... the bounce back to them unread. With some notice of the rejection would
be nice too.

Is there such an option in Office?

No, messages can only be rejected by the mail server.

I'd probably just use the Rules Wizard (exactly how depends a little on
your version of Outlook which you didn't tell us) to create an
auto-reply to them informing them that their message was automatically
deleted without being read.

Of course, that may just motivate them to send to you from a different
e-mail address.

No. There is probably a way to "auto respond", but you can't reject email
which has been accepted by the mail server. Worse, such auto responses may
be deemed abuse, if the recipient email address was forged.

This is really pointless. First, mail clients can't bounce messages, only
servers can. It's a special format message generated at a specific point in
the SMTP communications.. Second if you think you're going to punish a
spammer that way, you're mistaken. Most often, the address a spammer uses
is either faked completely (so you'll only get a bounce from your reply) or
it's the address of some innocent whose address has been hijacked (and then
you'll be punishing the innocent, not the spammer). If it's for someone you
know but just don't want sending you messages, it would be best to call them
and ask them to stop or simply add their address to your Blocked Sender
list.
