How can I set the "from" and "to" fields to display email address

I would like to have the option of showing the address instead of name in the
"to" field as I have a different addresses forwarded to Outlook.

Post is too vague. In the To: field of what, and in what version of Outlook?
"I have a different addresses forwarded to Outlook" makes no sense.

For outgoing messages, modify your Contacts so that the Display As field
contains what you want to see in the recipient fields. To control what your
recipients see as the From, modify your account properties to remove the
"Your Name" field.
