How do I send email to multiple contacts such that only the reciepint of the
email can see their own email address and noone elses. (ie where is the BCC
facility in Windows Mail??)

Open a new mail window, on the View menu of that window select show all
headers.

Close that window without doing anything else.

All new mail windows will now open with that option available.
