I have several alternate email addresses that funnel back to me on Outlook.
How can I send an email so that the "from" line is from one of these
alternates?

Which mail account type are you using?
Assuming POP3 see;

If you have multiple e-mail accounts defined in Outlook, use the
Accounts toolbar button while composing an e-mail to select one of them
if the default account is not to be used.
