I am creating an enquiry form and would like to add "a copy of your message
has been emailed to you" but I can't see how I can actually get the data to
be copied to the person who input it. I want to be sure they won't get a
copy of all my enquiries!

No, not with the basic Frontpage form features. This would have to be a

If you use a custom confirmation page, you can always put a message "please
print this page...."
