My emails are grouped by received for example, today, yesterday, last week,
last month, etc. Is there a way I can display how many emails there are in
each group in the header?

No, but you can select the header of the group and press ENTER. Outlook will
then display a warning and asks if you are certain you want to number x
number of items. Of course you'll click "No" but at least you'll know the
number of item in the group.
