I would like to be able to use outlook on multiple computers, particularly
ones that do not have office installed, for example while I travel.

I always keep a 4G U3 samrt drive with me and I would be willing to install
some type of abbreviated outlook so I can easily check my email while I
travel.

Is any work being done on such a product?

Don't think you can, it's too dependent on the registry to work under U3.

Nope, but you could could consider using an IMAP account type, Hosted
Exchange or even a Hotmail account which allows you to access all your mail
via a browser as they support a 2-way sync between client and server.
