How can I organize "High" priority task can I define?

I want to be able to put High priority task in the order or priority. Is
there a way to apply numeric values or lettering to High priority task to
better organized them?

Other than "low", "normal", and "high", there are no priority values
available.

You can add a custom field to a table view of your task list and use it to
define other priority codes on which you can sort and possibly group. That
field won't show up on a task form, though, unless you create a custom task
form and add that field to it.
