When I go to File-> Print I can no longer select other printers I have
installed on my system, the printer select box is grayed out. Only the
default printer can be printed to, and this "Print style" section is now
present that was not there before in the print dialog.

Any ideas on how to fix this so that I can print to non default printers
again?

Change the format from the default to Table style. Then change your printer.
