Chris,
I have bCentral hosting my personal sharepoint site and since they are part
of the Microsoft org they very adept at what they do. However, since you are
using someone else's servers you must conform to they best practices
policies.
Buy Windows Server 2003, Windows SharePoint Servicesm comes with it free,
and can play around with the form, fit, and functions to you personal tastes.
At work we went the server 2003 way and now I can do my own design and fine
tuning. On the hosted site, I can only ask them to install certain
functionality. For example, to display the PDF icon for pdf documents you
must install an ifilter, they still have not done that. At work I installed
it myself. Also installing web parts on a hosted site may not be possible; on
your own server it is not a problem.
