When scanning a large document I often end up with two attachments. How can
I combine these two attachements into one large document?

That's not up to Outlook but the program you open your attachments with.

Put both in a .zip file, or see if you can configure your scanner to
produce just 1 file for output. You might even be able to merge the 2
files together but how depends on what filetype gets produced by the
scanner (since I don't do that sort of thing then Googling for
"+<filetype> +merge" might help).
