Go to Tools -> Options -> Mail Set-up tab
Click E-mail Accounts button
Select "View or Change Existing E-Mail Accounts" and Click Next
Make sure the correct e-mail account is select and click the 'Change' button
Click the More Settings Button
Under the Advanced tab, check the box that says "Leave a copy of messages on
the Server"
Then OK out of it.

You can also select when the messages will ultimately be deleted - after a
certain amount of time, or when you delete them out of the deleted items
folder.
