I'm trying to set up a form that users can complete in Word. I'm having
trouble when I try to add protection to only parts of a form. Even entering
breaks - it still does not allow me to protect only certain columns. Any
suggestions as to what I'm doing wrong?

It will let you protect sections, not columns.

You need to use Tools > Protect Document... rather than just clicking on the
lock icon.

What you are talking about is what Word calls an "online form." Check this
