Hello,

I'm just wondering if there is an ability to somehow export the title,
sender, and date sent information of each email in my outlook into
excel. I would like to track trends for certain types of emails.

Is this possible?

Yes, you can use File-> Import and Export... to export information to Excel

And in 2k3 and 2k7 (at least) you can set up a table view and just select
the items and copy/paste directly into Excel.
