I know I can add an email to a task from within the task, but is it possible
to add (drag?) an email from the inbox direct to an existing task rather than
just creating a new task?

Yes. Open the existing task. Grab the email and drag it to the opened Task.
The Task will come to the top and you can drop it in the Details pane.

yes, and you don't even need an open task - drag it to the task folder (or
the task icon on the nav bar in 2003/2007) and drop it to create a new task
from the email. Right click and drag for additional options.
