Outlook 2003.
The names displayed in the 'From' field of my Inbox folder (and other
folders) are in first last format. My contacts are all listed last, first. Is
there a way to fix this so the 'From' field also displays last, first?

No, as the From field is independent from how you have things configured in
your Contacts folder. The From field is determined by the sender of the
message.
