When I press the Windows key followed by U for shut down, is there any
way of changing which is the default option? I think it is hibernate,
and I would like it to be Shut Down.

(I know I can shut down with Win, U, U; I would like to be able to use
Win, U, Enter, as I do with Win98. Trivial, just wondered if it could be
done!)
