to all future new tasks in OUtlook 07? (i.e. beyond what is the pre-set
default)

It's the same as your composing font for messages.

I was wondering the same thing, as it is not as simple as it was in 2003.
However, in the Tools menu click Options. On the tabs (at the very top of
your new window) click on Mail Format. You will then see a button called
stationary and fonts. You change your font default there.
