I would like to create a customized search folder that only displays mail
from people outside of my organization?

Exchange or not for internal addresses?

I'm not certain I understand your question. As I understand our email is on
an Exchange Server . However, I do not want to see employee emails. Therfore
I conclude your question is for internal addresses?

I asked because internal Exchange account addresses are different than
external Internet addresses. If you were using a non-Exchange server, it
wouldn't matter, because all addresses are external in that case.

Well, I did some experimenting and I couldn't find a reliable way to create
a search folder that showed messages only from external addresses and all
external addresses. You could use a criterion of "From contains @", but
that test looks only at the Display As value in the From field and doesn't
include the sender address. So, I guess I can't help. Sorry.
