I have two presentations. One is a superset of the other. Can I create a
single deck but only show slides according to which presentation I'm actually
giving?

I think your best solution is a custom show or two. You can set up
custom shows for all of the possible presentations you want to give.
Then, on the first slide, you can have hyperlinks to the correct custom
show.

Dear Susan Tait,

Create Custom Shows (Slide Show > Custom Show).
When you are ready to present, go to Slide Show > Set up Show and select the
Custom Show you want to run.
