I want a recipient of a Word document, to be able to type information into a
line in the document, such that the line is not erased or the text to the
right pushed along as the new data is entered by the recipient, in a similar
fashion as if the document was printed out and the data entered along the
line by hand, such as a signature line.

Use a table with just a bottom border in the cell in which you want the user
to enter the information.

See http://word.mvps.org/FAQs/TblsFldsFms/LinesInForms.htm and especially
