I would like to change my DNS settings but before I do, I would like to ask
if this could affect my 'Remote Desktop Connection' (to which I connect
using the server's IP from my laptop).

My concern is that something may go wrong after I change DNS settings (to
another provider). Is it likely/unlikely that I will lose my ability to log
in remotely if I do this?

Everything is possible, but, in this case, since you are connecting to the
server by IP, then you should be able to connect.
