Is it possible to choose the folder to which the OL 2007 junk mail filter
sends the junk mail/spam? Can it be changed from the "Junk E-mail' folder to
something else? thanks.

I think that is hard coded. YOu can try third party anti-spam programs to see what they can do for a different folder.
