Can I change the "label"options when creating an appointment?

I want to change the label options from vaction, personal etc to labels that
apply to my business.

Can I do that?

While in the Day/Week/Month view of the Calendar, click Edit | Label | Edit
Labels and change the names there.

I should have mentioned that this is a public calendar to which I have
"editor" rights
When I try to edit the labels, they are grayed out... is this a permissions
issue ?
or is it because this is a public folder?

In that case, you'll have to ask the folder owner to change the labels for you.
