How can I change the default formatting and make it STICK?????

I CANNOT seem to get Office 2007 to save new formatting defaults. Every time
I open a new message, I am again stuck with the same crappy default. How can
I force the new Office suite to take my formatting preferences?

A follow up question... Is anyone else sick and tired of the extra spaces
Microsoft has introduced into every e-mail?
