I am trying to reduce my email load and trying to keep track of it.
Is there some way that I can automatically count the number of emails I have
sent each day, so I can record it, without doing a manual count.

Create a filter in your Sent Items that only shows you items Sent 'today'
and just look at the statusbar? Otherwise, you're likely looking at writing
your own solution.
