I book apointments with clients, and would like to have a way to record the
amount Billed for the appointment with each client. Is there a way to
caputure and total the billed amount?

Depends on where you store that information. Are you using custom field for
that or is it simply based on the amount of hours?
A good reporting add-in for Outlook which might fit your needs is VBOffice
Reporter.
