How do I bring back the full menu (as in outlook 2003) during compose or
reading an email?

What exactly do you mean by "full menu"? The read and compose e-mail forms
in Outlook 2007 use the Ribbon, as most of the other Office 2007 products do.
What functionality are you looking for?
