I'm a novice user and am working from a template that I purchased from one of
the "big" template sites. Whenever I bold text in the body of the page, the
text changes from black to orange and defaults to Tahoma (from Arial). I have
been through every setting I can find and do not see where this is coming
from! Please, can you help? THANK YOU!

Can you post a link to a published page that exhibits this behaviour?
It sounds like a CSS rule that styles the <b> or <strong> tag to be
Tahoma and Orange. Look through any .css files that came with the
template.
